When it comes to cakes, a really good simple vanilla recipe can be adapted to suit any flavour. Here is the recipe that I have used for the past three years for both cupcakes and sponge cakes. It makes a really delicious fluffy cake.
Ingredients
200g Self Raising Flour
200g Caster Sugar
200g Baking Margarine or Unsalted Butter
2 tbsp Vegetable oil (yes, thats right)
4 Medium Free Range Eggs
2 tsp Vanilla Extract
Method
Pre-heat oven to 160C Gas mark 3 and line the cupcake tin or grease and line a cake tin.
This recipe will make an 8" cake or 16 cupcakes.
With an electric mixer cream together the butter and caster sugar until pale and fluffy and add the oil. Then add the eggs one at a time and alternate with the flour until all ingredients are combined. Finally add the vanilla extract. Using an ice cream scoop - I find this is perfect for measuring out cupcakes- put one scoop in each cupcake case.
Bake for 25 minutes if you are making cupcakes or 45-50 minutes for a large sponge cake.
As I said you can change the flavour of the sponge to suit you needs for example when making a lemon sponge you can substitute the vanilla for either lemon extract or fresh lemon zest and 1 tsp of lemon juice.

Jar Cakes!
This week has been a very quiet week for me with no cake orders to do, this gives me chance to try new things!! I had seen cake jars online and also at a market I went to over the weekend so decided to give them a go, they are so easy to put together and look super cute when they are done. I baked a batch of vanilla cupcakes and whipped up some vanilla buttercream
The flavours I went for this time are :
Lemon Meringue - filled with tangy lemon curd and crunchy meringue pieces
Jammie Dodger - with lots of gooey strawberry jam and mini biscuits
Creme Egg - lashings of creamy caramel and mini creme eggs buried inside
Marshmallow - layers of little marshmallows and pink melted chocolate.
They would look great on a wedding dessert table or for a special birthday party, and can be done in any flavour.

Introduction To Myself
Self taught, small time baker with big dreams, and a love for everything CAKE.
I started baking as a hobby whilst on maternity leave, which soon became part of my everyday life. This spurred me on to create my own business.
The purpose of this blog is to share my passion. Including recipes and the process of how I make all of my cakes.
